Ingredients

Main Ingredients:

  • 1 cup of long-grain rice – Perfect for absorbing all the savory flavors. Basmati or jasmine rice also works beautifully.
  • 3 large yellow onions thinly sliced – The star of the show, caramelized to perfection for that rich, sweet flavor.
  • 2 tablespoons of butter – Adds a velvety richness to the onions.
  • 1 tablespoon of olive oil – Prevents the butter from burning while cooking.
  • 2 cups of beef broth or vegetable stock – Infuses the rice with deep, savory flavors.
  • 1 teaspoon of dried thyme – Brings a fragrant herbal note to the dish.
  • 1 clove of garlic minced – For an extra layer of flavor.
  • 1/2 cup of shredded Gruyère cheese – The ultimate finishing touch adding creaminess and a hint of nuttiness.

Seasonings:

  • Salt and freshly ground black pepper – Adjust to taste for perfect seasoning.

Optional Add-ins:

  • Mushrooms or spinach – For added texture and nutrition.
  • Parmesan cheese – If you want a sharper saltier twist.

Instructions

Step 1: Caramelize the Onions

  • Heat butter and olive oil in a large skillet over medium heat.
  • Add the sliced onions and stir to coat them evenly in the fat.
  • Cook, stirring occasionally, for about 20–25 minutes until the onions are golden brown and caramelized. Reduce the heat if they start to brown too quickly.
  • Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.

Step 2: Toast the Rice

  • Push the caramelized onions to one side of the skillet.
  • Add the uncooked rice to the other side and toast it lightly for 2–3 minutes, stirring occasionally. This step enhances the rice’s nutty flavor.

Step 3: Add Broth and Simmer

  • Pour in the beef broth (or vegetable stock) and sprinkle in the dried thyme. Stir to combine everything evenly.
  • Season with salt and pepper to taste.
  • Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and let it simmer for 15–20 minutes or until the rice is tender and has absorbed the liquid.

Step 4: Finish with Cheese

  • Once the rice is fully cooked, remove the skillet from heat and fluff the rice with a fork.
  • Sprinkle the shredded Gruyère cheese over the rice and cover the skillet again for 2–3 minutes. The heat will melt the cheese, creating a creamy, indulgent finish.

Step 5: Serve and Enjoy

  • Give the dish a final stir to combine the melted cheese with the rice and onions.
  • Serve hot as a main course or alongside your favorite protein for a delicious side dish.
