Ingredients
  

  • 1 pound Italian sausage mild or spicy
  • 1 cup Ditalini pasta
  • 1 cup heavy whipping cream
  • 1/2 cup freshly grated Parmesan cheese
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 1 diced onion
  • 3 minced garlic cloves
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions
 

Brown the Sausage (5 minutes)

  • Heat a large pot over medium-high heat
  • Remove sausage from casings and crumble into the pot
  • Cook until golden brown, breaking up larger chunks

Sauté the Aromatics (5 minutes)

  • Add diced onions, carrots, and celery to the pot
  • Cook until onions become translucent
  • Stir in minced garlic for 30 seconds until fragrant

Build the Base (5 minutes)

  • Pour in chicken broth
  • Add diced tomatoes with their juices
  • Stir in Italian seasoning and red pepper flakes
  • Bring to a gentle boil

Add Pasta and Simmer (10 minutes)

  • Add your choice of small pasta
  • Reduce heat to medium-low
  • Cook until pasta reaches desired tenderness

Finish and Season (5 minutes)

  • Stir in heavy cream and spinach
  • Add grated Parmesan cheese
  • Season with salt and black pepper to taste
  • Let spinach wilt for 2-3 minutes
